Celeste’s Sausage and Peppers

3-4 onions sliced (Vidalia)
10-15 cloves garlic, sliced
4 bell peppers, sliced (assortment of any colors you like)
10 links Italian sausage (mixture of mild, hot and sweet)
1 teaspoon dried oregano
1-teaspoon fennel seeds
Pinch or two of kosher salt
5 cracks of fresh black pepper
1-cup olive oil
In a disposable pan layer onions, peppers and sausage. Sprinkle with herbs and olive oil. No need to mix yet. Cover with aluminum and cook in oven for about 30 minutes at 350 degrees. Uncover and cook another 15 minutes or until sausage is no longer pink and [peppers and onions are soft.
If you are tailgating on site, cook covered over indirect heat (coals on one side, your pan on the other) for about 45 minutes, stir occasionally. Uncover and cook accordingly to your grill’s heat.
Serve on a soft hoagie roll or as is with a knife and fork.
